With a citrus aroma of grapefruit, lime, pineapple, lemon tea, white flowers and honey. Rich acidity and a good permanence in the palate.
The art of elaboration
Wine begins in the vineyard. First of all, wine is grape, the healthier and mature they are, the better the wine. San Vicente Valley: Located 100km south of Ensenada, 10km from the Pacific Ocean and 100m above sea level.
Wine Harvest: End of August - mid October. When the fruit has acquired the desired degree of maturity.
The transfer from the harvest to the cellar must be done with great care, so that the grape does not suffer any pressure. The bunches are transported to the destemmer, which delicately threshes grapes.
Aging process: from 12 to 14 months in American and French Oak barrels.
Maceration and fermentation: By an infusion process, the sugary must is transformed into alcohol, the coloring matter, the tannins and the aromatic compounds that contain the solid part of the grape are dissolved in the juice which gives color and character.
The wine is dosed with an exact volume, so that the necessary empty space is left to lodge the cap plus an air chamber that allows dilatation.

It all started as a couple's dream that began in the summer of 2007, after a brief but enriching experience in a winemaking course at the School of Crafts located in Porvenir, Baja California.
This aspiration is the clear reflection of the respect, affection and admiration that we have for one of the most representative trades and vocations in Baja California. Undoubtedly, a young project but sufficiently committed to quality, details and constant improvement. We are happy to be able to represent in these great ensembles, the passion and hard working days of those who, in one way or another, take part in the elaboration.
